*Legumes Combo* Cooked peas, honey beans, and kid

*Legumes Combo*

Cooked peas, honey beans, and kidney beans are nutritious, versatile, and delicious additions to a healthy plant-based diet. By incorporating these legumes into your meals or even combining them in a meal, you can reap the rewards of a protein-packed meal, improved heart health, digestive well-being, and overall vitality. So go ahead, get creative with legumes and unlock their incredible benefits!

Some of the ingredients you could need to create this Legumes Combo delicacy:

- Peas (half cup)
- Honey beans (1 cup)
- Kidney beans (half cup)
- ⁠Diced tomato (1 large-sized)
- Diced onion (1 medium-sized)
- Diced carrot (1 medium-sized)
- Diced celery (2 medium stalks)
- Scotch bonnet (optional)
- Vegetable stock (water will do the job too!)
- 2 teaspoon palm oil (optional)
- 3 tablespoon vegetable oil
- Seasoning (to taste), but preferably black pepper and salt

OK, let's cook! (don't forget to wash your hands thoroughly first😉)

Direction:
- Heat up the vegetable oil (low-medium heat)
- Add the chopped onion to sweat; add a pinch of salt and stir
- Add the chopped carrot and celery stalk, continue to stir until fragrant
- Add the chopped tomatoes and pepper (optional) and stir intermittently for 5 mins
- Deglaze with vegetable stock (or water), and stir
- Add plainly cooked honey beans, kidney beans and peas to simmer on low heat for 10 mins
- ⁠Season with black pepper and salt to taste, let is simmer for a little bit and set it down!
- Add one 2 teaspoon of palm oil (optional, to influence colour) and let it simmer for 3 minutes, then set it down. Food is ready!

At MyVeganAfrica, we've spent the month of September reviewing some of our pilot activities, evaluating their impact and traction, continuing our important market research, and planning for our pan-African expansion. We're looking forward to an engaging October as we roll out some of our projects and especially look forward to YOUR participation in our growing community.

Last week Friday, we organized a workshop called "Chef for Plant-based Cuisines"—the first in a series of our Chef engagement programs to be held across Africa. The event lasted for 5 hours and featured engaging discussions, cross-learning experiences, and, of course, delightful vegan cuisine.

We would like to extend our heartfelt thanks to our wonderful facilitators who made this workshop such an enriching experience for the attendees. Our co-founder, @drkikiope had the privilege to speak on the topic "Why Plant-based Diets?", while Dr. Tushar, a medical doctor and plant-based dietician, delivered a presentation on "Plant-based Nutrition - Benefits and Considerations."

That's not all!

Chef Daniella, founder of @soulveg_kenya, shared insights into the role of chefs in the vegan movement, and to crown it, Chef Bola of @provegng led an exploration of plant-based cuisines, wholesome plant-based foods, locally grown foods, meat alternatives, and recipe design.

We hope you are off to a great start this week and you get some lunch inspiration from this delicious pasta meal incorporated with tofu chops and mushrooms. 🤤

Pasta has been widely accepted by many different cultures over time, including Africa, where we have adapted pasta cuisines and recipes to our local tastes.

However, it is important to know that with different types of pasta, some are more nutritious than others. Some great tips to eating a healthy pasta meal is to choose pasta made from whole wheat, include lots of vegetables, limit the pasta serving size, and include plant-based proteins as in the picture.
